I originally gave this four stars because I thought the sugar crystals were too big. But it's been three months now and I have an eight-month-old who only sleeps in twenty-minute chunks and I'm too tired to care about crystal size. I was looking at my old photos of baked goods from before baby and they looked all glossy and perfect—turns out that was just the lighting in my old apartment. The vanilla smell is the real hero here. I used it in a coffee cake I forgot I was making at 3am and it was the only thing that tasted like I'd actually put effort in. I'm coming back to say: fine, five stars. Sorry for being cranky.

Just got off a twelve-hour and I'm still jittery enough to write this. This is my third jar, I think. First one was for me, to dump in my overnight oats when I don't have the brainpower to separate vanilla pods. Second was for my neighbor who bakes. Third was for my sister who's also a nurse and she texted me at 2am a picture of her coffee mug with the little black flecks floating in it, no caption needed. The sugar is fine, it's sweet, it smells like actual vanilla, not that fake stuff. Only complaint: the lid is hard to twist when your hands are numb from scrubbing. But that's not their problem.

Pros: fine grain, actual vanilla specks, smells good if you stick your nose in it. Cons: bag doesn't reseal well, the jar version is too tall for my spice rack, makes my counter look cluttered next to the minimalist stuff. I keep knocking it over when I reach for the pepper mill.
